10 days late.
We finally celebrated Thanksgiving, better late than never. Our intentions were to celebrate last Sunday, but our weekend was disastrous and our plans got bumped back one more week.
I spent the majority of the morning in the kitchen, praying that I would be able to replicate a traditional Thanksgiving with the Chilean products I had purchased. All in all, everything turned out just as yummy as back home with a minor exception to the green beans (note: Chilean chicken broth is really salty).
This was what was on the menu:
Although I definitely missed having family around and all of the comotion, laughter, and chaos that ensues, I enjoyed having a Thanksgiving with just our little family. Usually, Carly is exiled to the kiddie table, but this year I got to see her enjoy the food and listen to her list of thanks. I was amazed by her gratitude. This was her list:
Just as I my eyes began to well up with tears, she added, "Oh, and Santa... and penguins." My laughter squelched the the lump forming in my throat and I thought to myself, "I am so blessed." Truly, my cup runneth over (Psalms 23:5).

Cornbread Dressing with Chicken baked inside--I "chickened" out on cooking my first turkey.

And Carly is so sweet. I love her little list. I know what you mean about the kids being exiled outside. I miss eating with the kids. . .sometimes!

Anyway, happy Thanksgiving! I had like 4. The exact day doesn't matter, All you need is food and family. That is cute that your own family could join together. Carly is so cute.

awwwwww! That's so sweet! You are a wonderful Mother and wife for doing this. You will always have memories of your Thanksgiving in Chili! The cake looks soooo good. i will have to try it soon when I'm feeling ambitious!
